Combine all of the ingredients in a pot over medium-high heat and bring to a gentle boil.

2.

Reduce the heat to medium and continue to cook for 20 to 25 minutes or until the vegetables are tender.

3.

Transfer the soup to a blender or food processor and blend until smooth.

4.

Add more vegetable broth or water to thin, if needed.

5.

Divide between bowls and enjoy!
