Cucumber.................................1/4 cup

Mayonnaise.....................10 grams
Sriracha.............................3 grams
Lemon Juice.....................2 tsp

Cooking Instructions

Cook the rice according to the package directions.

Bring a pot of water to a boil and add the edamame. Cook until edamame is tender, about 3 to 5 minutes.

In a pan over medium heat, add olive oil. Add the shrimp and cook for 1 to 3 minutes per side or until the shrimp are no longer translucent.
4.
In a bowl, whisk together the mayonnaise, sriracha, and lemon juice.
5.
Divide the rice, shrimp, edamame, and cucumber evenly between bowls. Top with green onion and drizzle with the spicy mayonnaise. Enjoy!
