Ingredients
Seasonings
Celery Root....................3/4 cup
Spring Onion (green part).....1 tbsp
Carrot............................1/2 cup
White Potato................1/2 cup
Vegetable Broth...........3/4 cup
Dried parsley................1 tsp
Dried Chives.................1 tsp
Sea Salt..........................to taste
Preparation
Peel & Dice into small cubes:
Celery Root
Carrot
Potato
Finely Dice:
Spring Onion (Green Part)
Cooking Instructions
1.
Combine all of the ingredients in a pot over medium-high heat and bring to a gentle boil.
2.
Reduce the heat to medium and continue to cook for 20 to 25 minutes or until the vegetables are tender.
3.
Transfer the soup to a blender or food processor and blend until smooth. Add more vegetable broth or water to thin, if needed.
4.
Divide between bowls and enjoy!
