Chicken Thigh (skin on, boneless)......2 pieces

Carrot...................................................180g

Potato..................................................180g


Optional: 

Onion..................................................half

Chicken Marinade:

Olive Oil..........................................2 tbsp

Garlic...............................................2 cloves

Dried Paprika..................................1/2 tsp

Dried Thyme...................................1/2 tsp

Black Pepper...................................1/2 tsp

Salt...................................................1/2 tsp




Preparation

Preheat The Oven:

  • 400ºF (205ºC)

  • Line a baking sheet with parchment paper


Mince / Crush:

  • Garlic


Marinate The Chicken:

  • Olive Oil

  • Paprika

  • Thyme

  • Black Pepper

  • Salt

  • Garlic


Cut Into Bite Size Pieces:

  • Carrot

  • Potato

  • Onion (Optional)

Cooking Instructions

1.

Place the marinated chicken thigh on the baking sheet, skin side up. Keep the remaining marinade.


2.

Toss the carrot and potato in the remaining marinade until evenly coated. (optional: onion)


3.

Spread the marinated carrot and potato around the chicken on the sheet pan.

4.

Place the chicken and vegetables in the oven and roast it for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).


5.

Let the chicken rest for 5 minutes before serving for juicy, flavorful results. Enjoy!
