Cooking Instructions
1.
Cook the pasta according to the package instructions. Before draining, reserve about 1 cup of the pasta water. Drain the pasta.
2.
While the pasta is cooking, heat up a pan to medium heat. Add the olive oil to the pan and cook the shrimp for 2-3 minutes per side, until pink and cooked through.
3.
Add the minced garlic to the pan and stir-fry for 30 seconds until fragrant. Be careful not to burn the garlic.
4.
Lower the heat and add the cooking cream to the pan. Add the lemon zest and stir in the fresh lemon juice, parsley, salt, and black pepper.
5.
Add the cooked pasta to the pan with the sauce. Toss to coat the pasta evenly. If the sauce seems too thick, add a little of the reserved pasta water until it reaches your desired consistency.
6.
Garnish with extra fresh parsley and grated Parmesan cheese, if desired. Serve and enjoy!
